
Avocado Strawberry Spinach Salad with Balsamic Dressing
- 6 cups fresh baby spinach
- 1 pint strawberries, sliced
- 1 avocado, diced
- 4 ounces crumbled feta or goat cheese
- 1/4 cup sliced almonds, toasted (again I cheat and buy these in the produce section, pre-sliced and pre-toasted)
- half a small red onion, thinly sliced (optional)
For dressing:
- 4 tablespoon olive oil
- 3 tablespoons balsamic vinegar
- one tablespoon Dijon mustard
- salt and pepper to taste
- Wisk together dressing ingredients in a small bowl.
- Layer two bowls splitting ingredients in half with spinach, strawberries, avocados, almonds and cheese.
- Top with dressing and enjoy.
**Makes 2 servings
**2 on B's dish scale. Bowls you eat out of and a cutting board!
